Located in the Kamimizu district of Hokumachi, Okazaki City, Aichi Prefecture, Shibata Sake Brewery brews sake using ultra-soft spring water "Kanzui".
This is Takatsukasa's dry sake, which leverages the softness of its ultra-soft water.
Previously, moromi management involved stressing the yeast to advance fermentation and reduce sugar content, but this sake has been brewed with a reconsideration of sake making that utilizes ultra-soft water.
Let your heart be 'empty' and 'light.' This is a dry sake that gently accompanies your meal.
Warm sake is also recommended!
