No, Islam was not influenced by the Ebionites. Q 3:49 says Jesus came to relieve the Israelites of some of the burdens that have been placed upon them. The Ebionites taught (according to the church fathers) complete and total adherence to Jewish law. The Quran doesn't teach this.
I am so tired of this theory being floated around in the Muslim apologetic circuit for the better part of I don't even know how many decades, but it needs to end because it's just not true and doesn't accord with the evidence we have.
Further, we don't even know if there were Ebionite communities existing in 7th Century Arabia so to assume some sort of continuous link of tradition with them along with the theological problems listed above is problematic to the theory.
